Tosta Mista is a Portuguese ham and cheese toastie that’s loved equally by the locals and by those just passing through. It’s a Portuguese breakfast staple that’s available at every pastelaria you go, usually at a very cheap price. The average cook won’t need a recipe to make a simple toastie, but don’t be fooled, the Portuguese tosta mista is not ordinary. Today I share with you some tips and tricks on how to make this Portuguese buttery delight.
Portuguese Style Ham and Cheese Toastie
Tosta Mista meaning simply mixed toastie is a grilled sandwich that combines a mix of ham and cheese. It’s one of the foods that the Portuguese break their fast with, oftentimes accompanied by a milky coffee.
If you order it at a pastelaria, you will probably be given the option to choose between pão caseiro (homemade style) or pão de forma (your square soft white bread). I prefer my tosta with pão caseiro, which is usually made with big slices of rustic bread. The filling of the tosta mista is sliced ham, sliced white cheese and butter. Any sliced cheese that melts will work, in Portugal you can get ‘queijo flamengo’.
The secret to a good tosta is buttering the bread on the inside and on the outside before grilling it. Once your toastie is done, you add another layer of butter on top. The amount of butter? Enough for you to see little puddles of melted butter in the ridges created by the the toastie maker. The finish touch is to cut a piece of garlic to rub on the top slice. You can also sprinkle it with some oregano.
